Intense & Fruity

We love the mix of dark fruity and creamy chocolaty notes in this coffee and have therefore developed a light roast espresso from this special lot.

About this coffee

Before the perfectly ripe coffee cherries go into production, the farmers sort out unripe and overripe coffee cherries.
A pulper then separates the pulp from the coffee core (bean). The coffees are then divided into three classes depending on their density. Classes 1 and 2 are processed separately. Class 3 is considered inferior. The coffee is then dry fermented for 18 to 36 hours in concrete tanks under a shaded roof to better control the temperature during fermentation. After the short fermentation, the coffee beans are washed, sorted again according to density in washing troughs and soaked in clean water overnight.
The coffee is then dried in the sun on African drying racks for 12 to 20 days. The exact duration depends on the weather conditions. The coffee beans are covered with plastic at noon and at night to protect them from the midday sun and the nighttime humidity.

ORIGIN INFO

The Farmers

The community's farmers harvest and pick the cherries on their small farms and transport the coffee to the factory, where it is delivered and paid for. The factory pays a small advance upon delivery. The rest is paid after the coffee is sold. The better and well run wet mills are able to pass on more than 85% of the selling price to the farmers. And that after deducting the costs for grinding and marketing.
