La Palma El Tucán Farm stands for organic agriculture and which has been focusing on the development and processing of new coffee varietals since its inception.
It is one of the most experimental coffee farms in the world particularly with regards to its innovative processing methods which is also the reason why many baristas all over the world pick coffee for their competitions (World Barista Championship, World Brewers Cup etc.) directly from La Palma y El Tucán (short : LPET)
There are a total of three series / lines that LPET produces on their farm in very small volumes:
“Warrior”, “Heroes” & “Legendary”
Our Legendary (# 410) is one of only 4 yearly produced nanolots worldwide. The size of this lot is limited to just 12.5 kg of green coffee which is about 1% of LPET’s annual output….in total!
The new “Sidra” variety was used here. Sidra is a hybrid of Typica & Red Bourbon which on the one hand combines the characteristic sweetness of Red Bourbon and the pleasant clear acidity of Typica.
Only the ripe and best coffee cherries are picked, sorted and then left in closed fermentation tanks for about 80 hours whereby the anaerobic fermentation process is started.
After the strictly controlled fermentation process was completed the coffee cherries were dried on drying beds for a total of 25 days under the open sky and turned regularly and under controlled conditions after several hours every day to guarantee optimal and even drying of each individual coffee cherry.
We are the only roastery in Europe where this absolute nanolot is available and you can expect a clear and sweet coffee with notes of sweet grapes, juicy red apples with a slightly vinous taste.
