About this coffee

This Sudan Rume, which is an extremely rare variety in itself and also produces very few coffee cherries when harvested, was processed by Diego Baraona in an extremely laborious manner after the harvest. Being natural (carbonic macerated), this coffee is incredibly complex. Deliberately light roasted to bring out its juicy, sweet flavors.

The Farm

This single origin espresso comes from El Salvador, more precisely from the region around Usulutan. In Usulutan, on the Tepeca volcano, is the beautiful farm Los Pirineos, owned by the Baraona family and where coffee has been grown since 1890. The farm is located in an area with a wonderfully cool climate, ideal for slow ripening, with ample rainfall and fertile volcanic soil. Diego Baraona's father Gilberto was one of the pioneers in El Salvador who set up his own Micro Coffee Mill. He loved experimenting with different processing and drying methods, with incredibly delicious results we think. Diego took over the farm two years ago, passes on the valuable knowledge of generations and breaks new ground. We continue to be amazed by the high quality of Los Pirineos coffees.
