About this coffee

Coffee cherries sourced from La Pastora, approximately an hour away from Don Eli Farm, are harvested ripe and processed with care by Carlos and his son Jacob. The cherries are left to ferment in tanks for 48 hours, a process commonly known as “reposado”, and are then pulped using a machine with a mechanical demuci bearing. This method helps to separate the coffee bean from the pulp and highlights the distinctive character imparted by the soil and climate, while being more environmentally friendly than full washing. Finally, the coffee is dried on african beds, taking twelve to fifteen days until it reaches optimal moisture content.

The Farm

On our original trip to Panama & Costa Rica in March 2022, we revisited Carlos Montero's farm Don Eli in the Tarrazú region. At the beginning of 2018 we had the first coffee from Carlos in our menu and have been enthusiastic about his White Honeys ever since. Carlos' passion, professionalism and dedication to coffee is evident throughout his work, as no detail is left unnoticed. This year we chose two of his lots: a Catuai White Honey and a Catuai Anaerobic. Both lots come from El Anfiteatro in La Pastora, undoubtedly Carlo's most prestigious and sought after lots each year. This plantation is located on the top of a famous mountain in Tarrazu called "La Pastora" and offers extreme altitudes of at least 1900 meters. The microclimate is ideal for growing coffee: the soil is very fertile, the air is fresh and cool, on the one hand it rains a lot, on the other hand the crescent-shaped plot receives many hours of sunshine per day. The height allows for optimal growth and slow ripening of the coffee cherries, making the taste even more intense. Carlos takes care of this plantation like his baby. To get there we have to drive an hour over the steep dirt mountain roads. He carefully fertilizes the trees of La Pastora and uses various methods to protect the coffee plants from diseases. We believe that the plantation's unique location and the great care Carlos devotes to it means that this hillside produces harvest after harvest some of the best coffees Costa Rica has to offer.
