About this coffee

The ripe coffee cherries come from the La Pastora region, about an hour from Don Eli farm. Here Carlos and his son Jacob process all the coffee from their farms together and with a lot of love. Only the ripest coffee cherries are used for this coffee and placed in fermentation tanks. During anaerobic processing, pH, temperature, and other parameters are closely measured and monitored to allow the coffee cherries to develop optimally. This treatment creates very special, intense and fruity flavors. The pulp is then separated from the pit using a mechanical pulping machine. The coffee is then dried outdoors on bunk beds for around 20 days until the coffee has reached its optimal moisture content.

The Farm

On our original trip to Panama & Costa Rica in March 2022, we went back to Carlos Montero's farm in the Tarrazú region. At the beginning of 2018 we had the first coffee from Carlos in our program. Since then we have been so enthusiastic about his White Honeys that we have included them in our range. Carlos' incredible passion, professionalism and dedication to coffee is evident everywhere and no step is left to chance. This year we chose two of his games: a Catuai White Honey and a Catuai Anaerobic. Both come from the El Anfiteatro plantation in La Pastora, which are undoubtedly among Carlos' most prestigious and sought-after lots each year. This plantation is located on the top of a famous mountain in Tarrazu called "La Pastora". It offers extreme altitudes of at least 1900 meters. The microclimate is ideal for growing coffee: the soil is very fertile, the air fresh and cool. On the one hand, it rains a lot, on the other hand, the crescent-shaped property receives many hours of sunshine per day. The height allows for optimal growth and slow ripening of the coffee cherries. This makes the taste even more intense. To get there we have to drive an hour up steep dirt mountain roads. He carefully fertilizes the trees of La Pastora and uses various methods to protect the coffee plants from diseases. We are convinced that the unique location of the plantation and Carlos' great care ensures that this hillside produces harvest after harvest some of the best coffees Costa Rica has to offer.
