About this coffee

The farmers carefully handpick the cherries for this coffee, discarding any that are unripe or overripe. The perfect cherries are then put through a pulper, which removes the pulp and separates the core (the bean). The beans are then sorted into three classes according to their density, with Classes 1 and 2 being processed separately and Class 3 being considered inferior. Following this, the coffee is fermented in the shade for 16-24 hours. It is then washed and sorted again by density in washing chutes, before being steeped in clean water for 16-18 hours and washed once more.

The cooperative

The Farmers Cooperative Gakuyuini, located on the slopes of Mount Kenya, takes advantage of the fertile volcanic soils and altitudes between 1600 and 1700 meters above sea level. It is part of the Farmers Cooperative Society, known as Thirikwa, that has earned high prices for their coffee for five consecutive years. Additionally, this factory is dedicated to more sustainable coffee production by recycling the water used in the process. There are almost as many women as men involved in the cooperative, with 674 women and 879 farmers. This factory implements several sustainable practices throughout its production. They distribute manure, which can be used as fertilizer, and recycle the water used to process the cherries, which is filtered through a lagoon system. They use a Penagos Ecopulper, which has also drastically reduced their water consumption.
