About this coffee

This premium pick from Ethiopia has been highly anticipated for almost six months. Our green coffee supplier from Oslo, Norway, Nordic Approach, conducted an experimental lot using a rare and new processing method: bag fermentation. As this method is not often used in Ethiopia, the coffee was not able to be exported for over half a year. The cherries come from an altitude of around 2000 meters above sea level and are hand-washed and sorted prior to fermentation. The cherries are placed in polypropylene bags and stacked two on top of each other. The bags are rotated every twelve hours for five days, allowing the lactic acid bacteria to develop, creating an intense, fruity and sweet coffee. After five days, the cherries are removed from the bags and spread on drying beds to stop the fermentation process. The average dry time is fifteen to twenty days.
